一般的には化学繊維資材を用いて被覆しますが、「八女伝統本玉露」の原料生葉は、稲わらや「すまき」という稲わら、葦等を粗く編んだ天然資材を用います。化学繊維資材に比べ、被覆内の温湿度環境が茶芽の生育に好適であり、かつ、「自然仕立て」により茶芽の一つ一つに十分な養分が送られるため、鮮緑色かつ艶が生まれます。

Compared to chemical fibers, the natural materials create a more suitable temperature and humidity environment within the cover, allowing each tea bud to receive ample nutrition and resulting in a vibrant green color with a glossy sheen.

「八女伝統本玉露」の香りはとても豊かで、「覆い香」を呈する香気成分Dimethy1 sulfideの含有量が高く、同産地の煎茶、玉露と比べても非常に多く、煎茶の5倍以上、玉露の約2倍であることが確認されました。

The aroma of "Yame Traditional Hon Gyokuro" is incredibly rich, with a high concentration of dimethy1 sulfide, a compound that gives off a unique nori-like scent. 

It has been confirmed that the concentration of this compound is significantly higher in "Yame Traditional Hon Gyokuro" compared to other teas produced in the same region, such as sencha and regular gyokuro, with levels over five times higher than sencha and approximately twice that of gyokuro. 

うま味成分であるテアニン等のアミノ酸を多く含み、渋味を呈する成分であるカテキン類の含有量が抑制されるため、浸出液の味は濃厚、「まろやか」で「こく」があります。

It contains high amounts of amino acids such as theanine, which contribute to its rich, mellow flavor with a strong umami taste, while the astringency of catechins is suppressed.

「八女伝統本玉露」の生葉生産茶園は、八女市及び周辺市町の中山間地域に存在します。年平均気温15.2℃、年間降水量2,019mmであり、立地条件がもたらす朝夕の気温差は、経験則的に高品質茶生産の適地とされる「朝霧の発生」をもたらします。

The tea is produced from raw leaves grown in tea fields located in the mountainous regions of Yame City and surrounding towns, where the average annual temperature is 15.2 degrees Celsius and the annual rainfall is 2019 millimeters. 

The difference in temperature between morning and evening caused by the location's geographical conditions results in the production of high-quality tea, which is considered suitable for tea production due to the occurrence of morning mist. 

また、気温差が大きいほど、夜間の植物の呼吸が抑えられ、うま味成分であるアミノ酸等の養分が多く蓄えられます。

The larger the temperature difference, the more the plant's respiration is suppressed at night, resulting in more nutrient-rich amino acids being stored. 

この地域は、稲作・麦作も盛んであり、被覆資材の原料となる「わら」の供給体制が整っています。

The region is also known for its rice and barley production, providing a stable supply of straw, a raw material for the covering material. 

「すまき」(稲わら、葦等を粗く編んだ物)等の天然資材の編み手や製造機械は、当該地域にわずかに残るだけで、八女伝統本玉露に用いる資材は他産地では入手困難であり、資材の供給体制が整っている状況が、「覆い香」など香り豊かな「八女伝統本玉露」生産を支えています。

However, the availability of natural materials such as "sumaki" (coarsely woven straw or reed) used in "Yame Dento Hon Gyokuro" is limited to the region, making it difficult to obtain outside of the area. The production and supply system of these materials in the area supports the production of the fragrant "Yame Dento Hon Gyokuro." 

歴史を辿りますと、1423年に栄林周瑞禅師が(旧)筑後国鹿子尾(現:福岡県八女市黒木町笠原)に霊巌寺を開山し、明国から持ち帰ったお茶の種子を播いてお茶の製法を伝えたのが八女茶のはじまりと言われています。

[ 600 years of History ]

The origin of Yame tea can be traced back to 1423 when Eirin Shuzen, a monk, opened the Reiganji Temple in Kuroki-machi Kasahara, which was part of the former Chikugo Province (currently Fukuoka Prefecture) and introduced the tea cultivation method using tea seeds he brought back from Ming China. 

その後、八女茶の生産は、1820~1840年頃に山間部全域に広がって行きました。

Tea production in Yame expanded throughout the mountainous regions from around 1820 to 1840. 

八女茶発祥時の茶種は「煎茶」が主流でしたが、当該地域が玉露生産に適していることが判明し、明治37年(1904年)頃から本格的に玉露生産が(旧)八女郡星野村(現:八女市星野村)において始まり、その後、周辺中山間地域に波及して行きました。

The primary tea variety at the time of Yame tea's origin was "Sencha," but it was later discovered that the area was suitable for producing Gyokuro. In 1904, Gyokuro production began in earnest in Hoshino Village (currently Yame City Hoshino Village) in Yame County and then spread to surrounding mountainous regions.

[地理的表示(GI)保護制度とは]

地域には長年培われた特別の生産方法や気候・風土・土壌などの生産地の特性により、高い品質と評価を獲得するに至った産品が多く存在します。これら産品のうち、品質、社会的評価その他の確立した特性が産地と結び付いている産品について、その名称を知的財産として保護する制度が「地理的表示保護制度」です。

The name "Yame Dentou Hon Gyokuro" roughly translates to "Traditional Yame Gyokuro," indicating that this tea is made according to traditional methods that have been used for centuries. Gyokuro is a type of green tea that is grown in the shade, which gives it a unique flavor and aroma. Yame Dentou Hon Gyokuro is grown in the shade for several weeks before being harvested, which allows the leaves to develop a rich, complex flavor profile.

To produce Yame Dentou Hon Gyokuro, the tea leaves are hand-picked and carefully processed to ensure their quality. The leaves are steamed and then dried, a process that helps to preserve their delicate flavor and aroma. The resulting tea has a light, refreshing taste with notes of sweetness and umami.

Yame Dentou Hon Gyokuro is often considered to be one of the highest-quality green teas in Japan, and it is highly sought after by tea connoisseurs around the world. It is usually prepared using a lower water temperature than other green teas, around 40-60°C, and steeped for a shorter time, around 1-2 minutes, to bring out the full flavor of the tea.

✅抹茶 / 緑茶 は、冷蔵庫に入れておけば、1年〜2年でも大丈夫です。冷凍庫に入れておけば長い間鮮度が保たれます。ただ、冷暗所に置いておく場合は、夏の場合、3〜4ヶ月で色も味も変わってしまいます。また、冷蔵庫に入れておかれた場合でも、抹茶/ 緑茶は香が移りやすいですので、臭いのきついものと一緒に保管されておくと、匂いが移ってしまうのでご注意ください。こういった理由により、ご購入頂いた抹茶 / 緑茶に記載しております”賞味期限”は、冷暗所で保存された場合の目安となっております。

✅Matcha / Green tea is fine for one or two years if kept in the refrigerator. If kept in the freezer, its freshness will be preserved indefinitely. However, if left in a cool, dark place, the color and taste will change in 3-4 months, especially in the summer. Also, even if kept in the refrigerator, Matcha / Green tea easily absorbs scents, so please be careful not to store it with strong-smelling items as the smell may transfer. Therefore, the expiration date is just a “guide” when stored in a cool, dark place.

✅玉露は、一定期間覆いをして、日差しを遮った状態で育てるのが特徴です。このように、摘採前の一定期間茶園に覆いをかける栽培方法のことを被覆栽培と呼びます。Gyokuro is characterized by being grown under cover for a certain period of time, blocking out the sunlight. This method of covering the tea garden for a certain period of time before harvesting is called covered cultivation. 

✅同じく被覆栽培をするお茶として「かぶせ茶」がありますが、かぶせ茶よりも玉露の方が被覆期間は長めです。地域によって差はあるものの、おおむねかぶせ茶が摘採前の1週間〜10日程度、玉露が20日程度〜とされています。There is also “Kabusecha” which is also cultivated under cover, but Gyokuro has a longer covering period than Kabusecha. Although there are regional differences, Kabusecha is generally covered for about 1 week to 10 days before harvesting, while Gyokuro is covered for about 20 days or more.

On the other hand, you don’t feel much bitterness or astringency. This is because it contains a lot of amino acids, which are the umami components of tea. Among the amino acids contained in tea, theanine is the most abundant component. 

✅テアニンは茶樹の根で作られ、葉へと運ばれていきます。この時、日光を浴びるとテアニンが分解され、最終的に渋味・苦味成分であるカテキンへと変化することが知られています。日光をほとんど浴びずに育つ玉露の場合は、旨味成分のテアニンがカテキンへと変化することなく、そのまま茶葉に残るので苦味が少なくなります。

At this time, it is known that when exposed to sunlight, theanine is broken down and eventually changes into catechins, which are astringent and bitter components. In the case of gyokuro, which grows with little exposure to sunlight, the umami component theanine remains in the tea leaves without changing into catechins, resulting in less bitterness.

✅玉露を飲むなら、香りにも注目したいところです。一口含んだ瞬間に独特の香りが鼻へと抜けていきます。玉露特有の香りは覆い香(おおいか)と呼ばれ、「青海苔のような香り」と表現されることもあります。When drinking Gyokuro, you’ll want to pay attention to its fragrance as well. As soon as you take a sip, its unique fragrance escapes through your nose. Gyokuro’s unique fragrance is called “Ooika” and is sometimes described as “a fragrance like green laver.”

✅被覆栽培がもたらす玉露の特徴は、味わいや香りだけに留まりません。玉露と一般的な煎茶の茶葉を見比べると、玉露の方がより深い緑色をしていることに気付きます。茶葉の緑色は、光合成で光エネルギーを吸収する「葉緑素(クロロフィル)」がもたらすものです。被覆栽培の下では、わずかな光で効率的に光合成をする必要があるため、できる限り多くの光エネルギーを取り込もうと葉緑素がたくさん作られます。その結果、茶葉の緑色が濃くなるというわけです。

In addition, the characteristics of Gyokuro brought about by covered cultivation do not stop at its taste and fragrance. If you compare the leaves of Gyokuro with those of regular sencha, you will notice that Gyokuro has a deeper green color. The green color of tea leaves is due to “chlorophyll,” which absorbs light energy through photosynthesis. Under covered cultivation, there is a need to efficiently photosynthesize with little light, so as much chlorophyll as possible is produced to capture as much light energy as possible. As a result, the green color of the tea leaves becomes darker.

✅玉露を美味しく楽しみたいなら、40℃程度の比較的低温のお湯でじっくりと淹れるのがおすすめです。低温で淹れると、旨味成分のアミノ酸は十分に抽出される一方、苦味・渋味をもたらすカテキンやカフェインはあまり抽出されません。玉露の特徴である強い旨味を楽しみたいなら、高温よりも低温抽出が向いています。

If you want to enjoy delicious Gyokuro, it is recommended to brew it slowly with relatively low-temperature water around 40°C. When brewed at low temperatures, amino acids, which are umami components, are extracted sufficiently while catechins and caffeine which cause bitterness and astringency are not extracted much. If you want to enjoy Gyokuro’s characteristic strong umami flavor, low-temperature extraction is more suitable than high-temperature extraction.
