How to Make Sweet Bean Paste (Neri-an)
Add 400ml of water to a pot and heat. Once boiling, add 240g of sugar and a pinch of salt. Stir continuously over medium heat to prevent burning, kneading until smooth and thick. Adjust water, sugar, and salt to your preference. One pack yields approximately 550–600g of finished bean paste.
