Product Description

This White Bean Paste Powder (Shiroan) is made exclusively from Hokkaido-grown white kidney beans, carefully processed into a fine powder after drying fresh, unsweetened bean paste.

No sugar is added, allowing you full control over sweetness and texture. By simply adding water and sugar, you can prepare fresh white bean paste (neri-an) tailored to your preference.

Smooth, clean-tasting, and versatile, this shiroan powder is ideal for a wide range of traditional Japanese sweets, including kinton, nerikiri, and other wagashi, as well as modern dessert applications.

Selected by Mukoh Matcha, this ingredient reflects the Japanese approach to confectionery: precision, simplicity, and respect for raw materials.

How to Make White Bean Paste (Neri-An)

Ingredients (per 1 bag / 150g):

  • White Bean Paste Powder: 1 bag

  • Water: 400 ml

  • Sugar: 240 g (adjust to taste)

  • Salt: a small pinch

Instructions:

  1. Bring the water to a boil in a pot.

  2. Add sugar and a small pinch of salt.

  3. Gradually add the white bean paste powder, stirring continuously to prevent sticking.

  4. Cook over medium heat, kneading well until smooth.

  5. Adjust water, sugar, and salt to your desired consistency and sweetness.

One bag yields approximately 550–600g of prepared white bean paste.
