Yoshino Hon-Kudzu is a premium Japanese starch made from 100% genuine kudzu root, traditionally produced in Yoshino, Nara Prefecture—a region renowned for centuries as the birthplace of Japan’s finest kuzu starch.

Carefully refined using time-honored methods, this pure hon-kuzu is prized for its exceptional clarity, smooth elasticity, and refined mouthfeel.
It is considered the highest grade of kudzu starch, used by master wagashi artisans and in traditional Japanese cuisine.

This product contains no substitutes, no sweet potato starch, and no fillers—only true kuzu starch.


How to Enjoy

For Cooking (Kudzu Sauce / Thickener)

Ingredients

  • Pure Kudzu Starch: 100g

  • Water: 400 ml

  • Sugar: to taste

Instructions

Combine kudzu starch with water and sugar, mixing well.
Heat over medium heat, stirring constantly to prevent burning.
Once the mixture becomes clear and elastic, remove from heat.
Cool in cold water, cut into pieces, and serve.
Enjoy with kuromitsu (brown sugar syrup) or kinako if desired.


For Goma Dofu (Sesame Tofu)

Ingredients

  • Pure Kudzu Starch: 50g

  • White Ground Sesame: 100g

  • Water: 400 ml

  • Salt: a pinch

Instructions

Dissolve the ground sesame in water and strain.
Add kudzu starch and a pinch of salt.
Heat over medium heat, stirring continuously until glossy and elastic.
Pour into a mold and chill until set.
Cut into pieces and serve.


For Kudzu Mochi

Ingredients

  • Pure Kudzu Starch: 100g

  • Water: 400 ml

  • Sugar: to taste

  • Kinako (optional)

Instructions

Mix kudzu starch with water and sugar thoroughly.
Heat over medium heat, stirring constantly.
Once the mixture turns transparent, remove from heat and pour into a tray.
Allow to cool and set, then cut into pieces.
Coat with kinako and serve.
